This cheese has a relatively thick rind which is ground off in special machines after aging. It is them painted red and packaged in spherical cans.
There is also a modern version, aged after being put in plastic vacuum packages.
It is relatively hard with intense, piquant flavor and inebriating, appetite appealing aroma.
When packaged in cans it needs no refrigeration as long as it is hermetically sealed.
Because of the intense flavor, Reino cheese should be eaten on its own though it can be used in snacks and sandwiches, dressings and even for grating and au gratin.
This is why supermarkets slice it and sell it in trays.
Reino cheese is well accompanied by full-bodied red wine. But it can be great with beer and fruit (grapes and pears) as well.

Reino is a Brazilian cheese, developed on the inspiration of the ultra-aged Edam cheese which came from Portugal in cans to resist the inconveniences of the long boat trips, when Brazil was still a Portuguese colony. It appeared firstly in Minas Gerais, but nowadays it is also produced in other States.
