After molding in tubular forms, provolone is submitted to long salting and then dried and smoked in special chambers. The next step is maturing.
In the last steps it is bound and hanged until purchased by the end consumer.
It is a semi-hard, closed dough (no holes) cheese, in straw-yellow color with a milky and smoky flavor which delights gourmets.
Indicated for the composition of dressings, snacks and sandwiches and own its own for degustation. But it can also be grated in very savory dishes au gratin.
This is the cheese used to make "provoleta", by roasting it on coals. Longer aging periods are used for bigger provolone cheeses (20, 50 or 100 kg), resulting in a more creamy texture and slightly more piquant and aromatic flavor.
Because of its pronounced flavor, it should be served with full-bodied red wines (also called robust wines). In our tropical climate we recommend degustation with beer.

You need 10 liters of milk to produce 1 Kg of Provolone cheese?


Provolone is a stretched curd cheese, of Italian origin. The most important producing sites are Lombardia, Veneto and Cremona.
We say "stretched curd" because after de acidulation of the milk, the curd is stretched and re-joined while hot.
The shape may vary - spherical, cylindrical, block, etc – though cylindrical is the most common shape.
