The history of Cheese

The manufacture and consumption of cheese is connected to the history of human food.
It seems that about 11,000 years before Christ men domesticated the first animals in Mesopotamia. It was a kind of a sheep that used to live at the foot of the mountains.

Those men of that time lived from hunting, wild cereals and the sheep’s milk. But the milk, with a pleasant and flavor and very nutritive, had, unfortunately a very limited period of conservation. Its coagulation soon changed its taste and transformed the structure of the liquid itself.

As it was very essential in a period of lack of food, the taste of the curdled milk and the creation of the first fresh cheese shall have been performed soon.

The discover of the natural curds for transforming the milk into cheese shall have happened due to their habit of using animals’ stomach to store liquids.

Therefore, the renine was also the first natural curds, which is used until now, for the production of cheese.

From that time until now, the product has developed all over the world. We can say that each country has its own original cheese, that is different from the cheese produced in another countries due to variables, such as, for example, the kind of female animal used, the climate, the kinds of pasture, manufacture processes, etc.
